Swedish Meatballs





Another dish which I love when I was in Sweden was the meatballs.
I could not find lingonberry in Singapore's supermarket, hence I replaced it with cranberry.


Ingredients :
Mashed potato.
500g potatoes, peeled.
100g unsalted butter
7tbsp double cream
7tbsp milk

1) Boil the potatoes over a high heat and then reduce the heat and simmer for 15 minutes or untill tender.

2) Drain thoroughly. Put 50g butter on the potatoes. Then mash the potatoes together with the butter.

3) Pour the double cream into a saucecpan and bring to a boil

4) Pour the double cream into the mashed potato along with  the milk and the remaining butter. Mix well.

For the meatballs
Ingredients :
50g breadcrumbs
7tbsp milk
400g lean minced beef
1 small onion finely chopped.
1 egg, beaten
1/4 tsp salt
1/4 tsp white pepper
50g butter
cranberry jam (substitute for lingonberry jam)

1) Fry the chopped onion and let it cool down.
2) Once it is cooled down, add to the minced beef.
3) Add the breadcrumbs, egg, salt, pepper into a bowl.
4) Mold the meat into a walnut size ball.
5) Melt the butter into a frying pan over a medium heat and fry the meatballs for about 10-15 mins. or until golden brown and cooked through.
 6) Serve the meatballs with the mashed potato and cranberry jam.
7 ) You may prepare instant mushroom gravy and pour over the meat balls.
