I bought the curry and pineapple sauce when I was in Sweden. Goes very well with the fish fillet.

Trip to Copenhagan and Malmo, Sweden

I went to Copenhagan and then drove to Malmo, Sweden on 1st March and stayed tilled 9th March. Though it was a short trip, I had enjoyed myself alot. I love the nature and the peaceful surrounding in Malmo. Lots of land and I could see the animals like deer and wild boars. It was a great break away from the noisy city.

I stayed in the cottage and I love the stove. It kept the cottage warm and cosy. I remembered watching the stars in at night. I felt like I'm watching lots of diamonds glittering in the sky.

It's a great experience and very fortunate being able to visit places where only the locals go.

Swedish Meatballs

Another dish which I love when I was in Sweden was the meatballs.
I could not find lingonberry in Singapore's supermarket, hence I replaced it with cranberry.


Ingredients :
Mashed potato.
500g potatoes, peeled.
100g unsalted butter
7tbsp double cream
7tbsp milk

1) Boil the potatoes over a high heat and then reduce the heat and simmer for 15 minutes or untill tender.

2) Drain thoroughly. Put 50g butter on the potatoes. Then mash the potatoes together with the butter.

3) Pour the double cream into a saucecpan and bring to a boil

4) Pour the double cream into the mashed potato along with  the milk and the remaining butter. Mix well.

For the meatballs
Ingredients :
50g breadcrumbs
7tbsp milk
400g lean minced beef
1 small onion finely chopped.
1 egg, beaten
1/4 tsp salt
1/4 tsp white pepper
50g butter
cranberry jam (substitute for lingonberry jam)

1) Fry the chopped onion and let it cool down.
2) Once it is cooled down, add to the minced beef.
3) Add the breadcrumbs, egg, salt, pepper into a bowl.
4) Mold the meat into a walnut size ball.
5) Melt the butter into a frying pan over a medium heat and fry the meatballs for about 10-15 mins. or until golden brown and cooked through.
 6) Serve the meatballs with the mashed potato and cranberry jam.
7 ) You may prepare instant mushroom gravy and pour over the meat balls.

1st attempt to make Swedish Cinnamon Buns

I missed the cinnamon buns when I was in Denmark and Malmo, Sweden. This is my first attempt to make the Swedish Cinnamon Buns. Looks abit dark but at least it tasted yummy. "Smaskens" :-)

 P.s. Smaskens means Yummy in Swedish.

Here's the ingredients:

400ml milk
110g butter
7g dried yeast
110g sugar
750g plain flour
1/2 teaspoon of salt
1 egg (For glazing)

For the filling :
110g butter
90g sugar
2tblsp cinnamon

Though Christmas has yet to come. I could fill the Spirit of Christmas by simply watching this video. The song is great.
It seems so fun to celebrate Christmas in Sweden. Especially the children.

Swedish Jubord

It's year end and I could see Christmas tree set up in department store already in Singapore. I love year end cos it's a season to have fun and really looking forward to Christmas and then welcoming the New Year. I'm very keen to know how Swedish celebrate Christmas. This video shows what kind of food is served in Swedish Jubord. They looking yummy... I love the settings on the table. The candles made the room very relaxing and romantic. I think I can buy them in Ikea, Singapore.
